Our Colombia Blend
This blend comes from the region of Tolima, a region that remained isolated until recently as a result of the Colombian Armed Conflict. As a result of this and the local geography, coffee is grown in a traditional way on small farms producing micro-lots.
The Arabica variety we have selected is called Caturra. In Tolima, it is grown at altitudes between 1200 and 1900 metres and crops twice a year. Caturra traces its lineage back to the original Typica variety, (via its Bourbon mutation) and is renowned for its cup quality, which increases with altitude. The product we use is grown at around 1850 metres and sourced from a small co-operative of under 60 growers.
The coffee is picked in fully ripened cherry, then taken to a receiving hopper. Next it is depulped and taken to tanks where the coffee is washed and left in water for 24 to 36 hours for fermentation.
Afterwards it is taken to the patio to be sun dried, before delivery to a store.
The green beans are shipped to an environmentally friendly facility in the UK where they are gently roasted to produce a fruity blend of medium acidity, with notes of caramel, chocolate and almond.
